Ingredients
- 1 package boneless skinless chicken (thighs or breasts, it’s up to you)
- Weber Honey Garlic Rub
- 1/4 cup chicken stock
- 1 (14.5 oz) can of diced tomatoes
- 1 yellow onion, julienned
- 1/2 cup balsamic vinegar
Instructions
- Rub your chicken down with a generous amount of the Weber Honey Garlic Rub. Brown the chicken in a pan over medium heat 1 to 2 minutes per side, just long enough to give the meat a little color. (Be careful with this step. The sugars in the rub can caramelize and burn.)
- Remove the chicken, and quickly deglaze the pan with chicken stock. Scrape all of the goodness off of the bottom of the pan during this process. Add the tomatoes, onion, and balsamic vinegar. Bring to a simmer and put the chicken back in the pan. Let it stew for 30 minutes. Serve over rice, and enjoy.
